I call today's dessert a cheat's brulee. It can be made in 15 minutes and any summer fruit can be used, which makes it wonderfully versatile. Top with cream and then drizzle with caramel. This can be done up to 30 minutes before serving, just don't put it back in the fridge once you've added the caramel. Be sure to keep a close eye on your caramel when it is cooking. This dessert is crunchy, sweet and, with a little Cointreau to taste, delicious.
Ingredients
4 cups | Fruit salad, include fruits like mangoes, berries, orange and pineapple (Main) |
¼ cup | Cointreau |
200 ml | Cream, lightly whipped |
1 cup | Caster sugar |
1 cup | Water |
Directions
- Place fruit in a large bowl and mix in Cointreau.
- Place in individual glasses or a large bowl. Spoon over whipped cream.
- Into a small pot place sugar and water. Bring to a simmer and continue to cook until it starts to caramelise. Cook until golden.
- Dribble caramel over cream. Let desserts sit, out of the fridge, until ready to serve. If you want to garnish, mint leaves work well.
