Serving suggestion: serve over roasted green vegetables, or steamed greens, or use as the base flavour for a dressing with a grain or rice and vegetables. It’s great with broccoli or green beans, or just over crisp lettuce.
Ingredients
1 Tbsp | Capers (Main) |
2 Tbsp | Sliced almonds |
1 clove | Garlic, crushed |
1 Tbsp | Fresh mint, finely chopped |
4 Tbsp | Olive oil, use up to 5 Tbsp |
1 Tbsp | White wine vinegar |
½ | Lemons, juiced |
1 pinch | Flaky sea salt |
Directions
- Chop the caper roughly, then add to a small bowl or jug with all other ingredients.
- Whisk well and taste and adjust as necessary.
