Ingredients
125 g | Capellini pasta, also known as angel hair pasta |
6 | Scallops, use up to 12 as desired (Main) |
2 Tbsp | Olive oil |
1 | Red chilli, finely sliced |
1 | Lemon, zested and juiced |
1 cup | Rocket leaves |
Directions
- Cook the pasta in plenty of boiling, salted water according to packet instructions.
- In the meantime, sear the scallops in oil in a hot frying pan for 1 minute on each side until just cooked through.
- Add the chilli and lemon zest.
- Drain the pasta and add to the scallops with the rocket and lemon juice. Toss gently and season with salt and pepper and more lemon juice to taste.
