Nothing beats a fried egg or two, especially eggs with crispy edges and a wobbly yolk. Serve eggs with toast and if wished, a side of bacon. Use the bacon fat left in the frying pan to fry the eggs.
Ingredients
1 Tbsp | Grapeseed oil |
3 large | Eggs, very fresh |
1 Tbsp | Oyster sauce, or hoisin sauce |
1 | Spring onion, trimmed and finely sliced |
1 tsp | Sesame seeds, toasted |
1 sprinkle | Coriander |
½ | Red chillies, finely sliced, optional |
Directions
- Place a medium heavy-based frying pan over highheat and add the oil. When the oil is hot, carefully break the eggs into the pan. Let them settle for about 30 seconds, then lower the heat and continue frying for about 1 minute, or until the white is set. Lift eggs out of the pan with a kitchen slice on to a serving plate.
- Drizzle over the oyster sauce or hoisin sauce. Scatter over the spring onion, sesame seeds and coriander sprigs. Top with slices of fresh chilli, if using.
