These brown rice balls are a nutritious snack to have on hand and are great for school lunch boxes, providing a sustained release of energy.
Ingredients
2 cups | Brown rice (Main) |
¼ cup | Water |
2 Tbsp | Tahini |
2 Tbsp | Olive oil |
2 | Spring onions, finely sliced |
1 tsp | Ginger, freshly grated |
¼ cup | Sesame seeds, plus more for coating |
1 Tbsp | Poppy seeds |
Directions
- Cook the rice in a rice cooker, following the instructions and adding the extra 1/4 cup water.
- When cooked and still warm add tahini, olive oil, spring onions, ginger, sesame and poppy seeds to the rice and mix well. Season to taste.
- Wetting your hands first, squish the mixture into small balls and roll into sesame seeds. Eat as is or fry in coconut oil if you would like the extra crunch.
- Serve with salad for lunch or as a snack with tamari for dipping.
