Ingredients
2 Tbsp | Olive oil |
4 | Garlic cloves, sliced |
400 g | Orecchiette, cooked (Main) |
600 g | Broccolini, trimmed and blanched (Main) |
1 cup | Kalamata olives, pitted (Main) |
1 Tbsp | Lemon, each of rind(grated) and juice |
¾ cup | Pine nuts, toasted |
1 cup | Pecorino cheese, finely grated |
1 to taste | Sea salt |
1 to taste | Cracked black pepper |
Directions
- Heat the oil in a large non-stick frying pan over high heat.
- Add the garlic and cook for 30 seconds.
- Add the pasta, broccolini, olives, lemon juice, lemon rind, pine nuts and cheese to the pan and toss well to combine.
- Sprinkle with salt and pepper to serve.
Tips and tricks: Be creative and add your favourite herbs to your pasta, such as oregano, thyme and flat-leaf parsley.
