Ingredients
¼ cup | Stock |
1 handful | Asparagus, chopped (Main) |
1 handful | Snow peas, chopped (Main) |
1 handful | Fresh peas (Main) |
1 | Baby cos lettuce, use 2 cos if wished, cut into chunks (Main) |
1 large handful | Mint leaves, and chopped chives (Main) |
1 sprinkle | Lemon zest |
Directions
- In a wok, bring the stock to a simmer. Add a handful each of chopped asparagus, snow peas and fresh peas and bring back to a simmer. Add chopped cos lettuce and cook quickly until just tender yet crunchy, tossing to help separate the leaves a little.
- Remove from the heat, add the mint leaves and chopped chives, season with a little lemon zest and sea salt flakes and serve as a side.
