Helen Young submitted this recipe as an entry into our special occasion dessert reader recipe competition. Helen says: "This is a firm family favourite and the best thing is that it's very easy to make and can be served up in different styles to suit the occasion. "A special occasion dessert because it frees up my time to go and enjoy the special occasion."
Ingredients
4 | Eggs, separated, at room temperature |
¾ cup | Sugar |
120 g | Butter, melted |
1 tsp | Vanilla essence/extract |
¾ cup | Flour |
2 cups | Milk |
1 ½ cups | Blueberries (Main) |
1 sprinkle | Icing sugar, for decorating |
Directions
- Preheat oven to 190C.
- Beat egg whites till stiff. Beat yolks and sugar in another bowl, add butter, vanilla. Beat well and add flour and milk. Mix again. Gently fold in the egg white, be careful not to overbeat.
- Put the blueberries into a greased baking dish and pour dessert mixture on top evenly . Bake 60 mins.
- Just before serving sieve icing sugar on top.
