A large batch of rich, beef stew is all the more satisfying when it's on hand in the freezer. Here's the recipe for making the beer braised beef.
Ingredients
2 cups | Beef, beer braised (Main) |
2 tsp | Ground cumin |
200 ml | Tomato passata |
1 can | Kidney beans |
2 Tbsp | Tomato paste |
3 | Chipotle chillies, dried |
Directions
- Place beer braised beef, cumin, passata, tomato paste, kidney beans and chillies (reconstituted in hot water for a few minutes then chopped finely) in a saucepan and stir, bringing to the boil.
- Simmer for 15-20 minutes to allow flavours to develop. Season with salt.
- Serve with steamed rice, guacamole, sour cream, coriander leaves and a squeeze of lime.
