Ingredients
2 large | Red capsicums, cut in half lengthwise, core and seeds removed (Main) |
3 | Ripe tomatoes, core removed and cut in half horizontally (Main) |
2 cloves | Garlic |
3 Tbsp | Olive oil |
1 pinch | Sweet smoked paprika |
4 | Beef sausages (Main) |
1 handful | Basil leaves |
Directions
- Heat the oven to 200C. Line a shallow baking tray with baking paper.
- Cut each capsicum half into thick strips. Place in the tray with the tomatoes and the garlic cloves. Drizzle with oil and season with the paprika and sea salt to taste. Place in the oven and cook for 20 minutes until the capsicum have softened.
- Meanwhile, heat a large frying pan over medium-low heat. Add a splash of olive oil, then the sausages. Cook turning often until beautifully golden all over, 20-25 minutes.
- Remove the capsicums and tomatoes from the oven. Place the sausages in the tray and top with the basil leaves.
Tip- steam a green vegetable to complete the meal.
