For many years (since Sugar Club, Wellington days) I've loved steak with a dollop of standard basil pesto but it's even more yummy with Coriander Pesto.
Ingredients
2 cups | Fresh coriander |
2 cloves | Garlic |
½ cup | Extra virgin olive oil |
¼ cup | Roasted cashew nuts |
¼ cup | Grated parmesan cheese |
4 pieces | Eye fillets of beef (Main) |
Directions
- Make the pesto in advance & refrigerate until serving. Place all ingredients apart from the steak into a food processor and pulse until well blended.
- Remove meat from refrigerator about half an hour prior to cooking. Oil both sides of the steak & season with salt & pepper.
- BBQ on a pre-heated grill until desired done to your liking.
- Serve each steak with a good dollop of the Coriander pesto. Put any extra pesto into a bowl and serve with the meal as it's so yummy people often want more.
