Bread and butter puddings were one of our grandmother’s classic desserts she had on rotation. It was always our favourite at any family gathering but we thought we would change it by using some banana bread and bit of chocolate.
Ingredients
75 g | Butter, softened, plus extra for greasing |
10 slices | Banana bread |
100 g | Caster sugar |
1 | Vanilla pod, halved lengthways and seeds scraped out |
4 large | Eggs, free-range |
600 ml | Cream |
600 ml | Milk |
4 | Bananas, sliced (Main) |
100 g | Dark chocolate, chopped |
Directions
- Heat the oven to 180C.
- Butter the banana bread on one side, then cut each piece in half diagonally.
- Whisk the sugar, vanilla seeds and eggs together until well combined, then pour in the cream and milk and continue whisking until smooth.
- Rub the inside of a medium ovenproof dish with butter, then layer the bread, butter-side up, bananas and chocolate, finishing with a final layer of bread butter-side up. Carefully pour over egg and milk mixture and leave to stand for 10 minutes.
- Cook for 35 minutes or until set around the edges. Remove from the oven and allow to cool. Dust with icing sugar and serve with cream and icecream.
