Ingredients
200 g | Butter, diced (Main) |
200 g | Caster sugar |
4 | Eggs |
1 | Lemon, zested, or zest of 1 orange |
2 | Bananas, use overripe ones, mashed (you may need 3 if they are small) (Main) |
2 punnets | Blueberries (Main) |
200 g | Self raising flour, sifted |
Directions
- Preheat oven to 180C. Cream butter and sugar until light and fluffy. Beat in eggs, one at a time, incorporating well after each addition.
- Fold in lemon or orange zest, mashed banana and blueberries, then fold in flour. Spoon mix evenly into greased muffin pans and bake for 20-30 minutes until skewer comes out clean.
- Cool in pan, then turn out and serve upside down, with cream, custard or yoghurt.
