I have banana trees in our back-yard. They are not as tasty as the normal bananas . I decided to mash them up with 3 Kiwifruit and use it for Banana & Kiwifruit cake. You got to have fresh coconut added to this recipe. Very delicious. Always feel so special when you just walk out to your backyards and pick your own fresh organic fruit.
Ingredients
2 ¼ cups | Wholemeal flour |
1 tsp | Cinnamon |
⅔ cup | Brown sugar |
½ cup | Brown rice |
½ cup | Coconut, fresh |
2 | Eggs |
½ cup | Coconut milk |
60 g | Unsalted butter |
1 tsp | Vanilla extract, use the Heilala variety |
4 small | Bananas (Main) |
3 | Kiwifruit (Main) |
3 | Kiwifruit, for decorating |
¼ cup | Jaffas |
Directions
- Preheat Oven to 180c. Line the base and 2 long sides with baking paper. Sift the flour and cinnamon powder into a bowl. Stir in the brown sugar and fresh grated coconut. Make a well in the centre. Whisk the eggs, coconut milk, butter and heilala vanilla extract. Mash bananas and kiwifruit with a folk. Add eggs and banana mixture to the flour mixture and fold until just combined. Pour into the prepared tin. Slice the remaining kiwifruit, and arrange around the cake. Bake for 45.- 55 minutes or until cooked when tested with a skewer.
- Icing: 250g cheese cream. 1 lime 1 1/2 cup icing cup Dozen of red Jeffers Put the Jeffers in a plastic bag. Seal it and use the roller to squash them.. Mix the well spread all over the top of the cake. Lastly spread the broken Jeffers on the cake.
