The fish and tomato go so well together, it is never a disappointment.
Ingredients
1 kg | Monkfish fillet (Main) |
2 cans | Italian seasoned tomatoes |
¼ cup | Breadcrumbs |
2 Tbsp | Parmesan cheese |
1 handful | Cashew nuts |
1 tsp | Fresh dill |
1 drizzle | Lemon juice |
1 Tbsp | Melted butter |
Directions
- preheat oven to 180. Place seasoned tomatoes into the base of an oven proof dish. Lay fillets on top and drizzle lemon juice over them. Season with pepper if desired. Combine breadcrumbs, parmesan, dill, cashews and melted butter to form a crumbly mixture. Sprinkle on top of fish.
- Bake for 30 minutes or until fish is cooked through. Serve with rice and green beans.
