Ingredients
| 1 to taste | Salt & freshly ground pepper |
| 2 | Tomatoes, beefsteak (Main) |
| 400 g | Goat feta (Main) |
| 1 to serve | Fresh thyme |
| 4 | Bay leaves |
| 1 Tbsp | Olive oil |
| 1 to serve | Rocket |
| 1 Tbsp | Vinegar, sweet Pedro Ximenez |
| 1 to serve | Crusty bread |
Directions
- Preheat the oven to 180 degC.
- Core and slice the tomatoes into rounds. Lay on an oiled tray, season, and bake for 30 minutes.
- In an ovenproof dish, put the feta on top of the thyme and bay leaves.
- Drizzle with olive oil and a grind of pepper, then bake for at least 30 minutes or until golden.
- Drizzle over the vinegar and serve warm with rocket leaves and warm crusty bread.
