Ingredients
2 Tbsp | Mint, finely chopped |
1 Tbsp | Olive oil |
2 tsp | Dijon mustard |
1 ½ Tbsp | Cider vinegar |
1 packet | Baby turnip, 290g, trimmed (Main) |
2 tsp | Runny honey |
1 to taste | Freshly ground black pepper |
Directions
- Simmer the turnips in salted water for about 10 minutes or until just tender. Drain thoroughly.
- Meanwhile, whisk the vinegar, honey, mustard and pepper in a bowl until smooth.
- Heat the olive oil in a small frying pan. Add the turnips, turning for a few minutes until lightly coloured.
- Add the vinegar mixture and stir until the turnips are well-coated and the glaze is thick.
- Add the mint, mix well and serve
