This all-green toast – avocado, green tomato, microgreens and optional green chilli sauce – makes a great start to the day and the perfect breakfast to serve on St Patrick's Day on March 17.
Directions
- Smash the flesh of 1 avocado with 1 small clove crushed garlic, ½ tsp sea salt, a small handful chopped coriander, freshly ground black pepper and the zest and juice of a lime.
- Cover hot buttered toast with thin slices of green heirloom tomato, sprinkle with salt, top with a big spoonful of avocado smash, garnish with micro greens and drizzle with a green hot sauce if you like things spicy.
