Hummus
| ¾ cup | Chickpeas, drained (Main) |
| 2 Tbsp | Lemon juice |
| 2 Tbsp | Tahini |
| 3 cloves | Garlic, crushed |
| 2 tsp | Ground cumin |
| 3 Tbsp | Olive oil |
Wraps
| 1 | Carrot, peeled and shredded |
| 8 | Flat bread wraps (Main) |
| 1 block | Feta (Main) |
| 1 handful | Rocket leaves |
| 1 | Avocado, sliced (Main) |
| 1 bunch | Fresh mint, leaves chopped |
Directions
- To make the hummus, place all the ingredients in a food processor. Process until smooth, then taste for seasoning.
- Lie the wraps on a bench and spread with hummus; add the carrot, feta, rocket, avocado and mint.
- Roll up tightly and either wrap in paper or plastic wrap or slice and serve.
