Ingredients
5 | Cooked prawns (Main) |
2 | Limes, or lemons, zested and juiced |
1 knob | Ginger, freshly grated |
1 handful | Dill, small, chopped |
1 drizzle | Olive oil |
1 | Avocado, mashed |
1 small | Garlic clove, crushed |
1 handful | Coriander, chopped |
2 slices | French bread, or more if prawns are large, toasted |
Directions
- Mix together prawns, the zest and juice of 1 lime (or lemon), grated ginger, some freshly chopped dill and a little olive oil. Leave to marinate.
- Mash together the avocado, crushed garlic, chopped coriander and the remaining lime zest and juice.
- To serve, pile avocado on toasted slices of french bread, top with prawns, 1 or 2 per slice depending upon size.
- Sprinkle with flaky sea salt and freshly ground black pepper.
