This is a beautifully quick and, most importantly, nourishing breakfast or lunch idea. It contains healthy fats, and of course, the many health benefits of green vegetables. It is fine to use silverbeet as an alternative to spinach.
Ingredients
1 bunch | Asparagus (Main) |
2 Tbsp | Macadamia nut oil |
1 bunch | Spinach, or silverbeet, roughly chopped |
¼ cup | Walnuts, raw whole |
1 slice | Lemon |
Directions
- In a frying pan on medium-high heat, saute asparagus in oil tossing regularly for 3-5 minutes.
- Steam spinach for a minute or two.
- Serve asparagus on steamed greens with walnuts and a wedge of lemon.
