Very tasty casual flan, I serve it with a green salad or roast vegetable salad. But it's good just on it's own, with cold meat, and just as good cold for a picnic or easy dinner in the Summer.I use canned asparagus when asparagus is out of season.
Ingredients
1 medium | Onions, diced |
2 cloves | Garlic, crushed |
1 Tbsp | Butter, melted |
2 medium | Potatoes, cooked & cubed |
½ cup | Milk |
3 medium | Eggs, beaten |
½ tsp | Salt & freshly ground pepper |
½ cup | Self raising flour |
1 cup | Tasty cheese, Grated |
1 bunch | Asparagus spears, Lightly steamed (Main) |
Directions
- Preheat oven to 200c. Steam asparagus lightly.
- Melt butter in a pan and add onions and garlic until golden. Add potatoes, and heat through. Mix milk, eggs, seasonings,and flour until blended. Combine with potato mix and pour into greased flan dish. Sprinkle with cheese and arrange asparagus on top. Bake for 20-30 minutes until set in middle.
