When I go shopping it is inevitable a block of blue cheese will be tossed in the basket for that “just-in-case” moment. It’s so useful for when guests pop in, to add instant flavour to an omelette or salad, or on a cracker while I wait for dinner. Here, I have combined crumbly blue with apricot jam to create a taste sensation in one bite. Using filo pastry means these sweet-savouries are quick and straightforward to make.
Ingredients
½ cup | Apricot jam |
½ cup | Cream cheese |
½ cup | Blue cheese, crumbled (Main) |
2 Tbsp | Chopped parsley |
1 serving | Freshly ground black pepper |
6 sheets | Filo pastry (Main) |
¼ cup | Melted butter |
Directions
- Preheat an oven to 170C. Line a baking tray with paper.
- In a small bowl combine the jam, cream cheese, blue cheese, parsley and a few grinds of pepper.
- Brush a sheet of pastry with butter, then place another on top. Cut the pastry into 8 even squares. Place a little filling into the centre of each. Butter around the edges then gather tightly to a point in the centre. Continue with the remaining pastry.
- Bake in the centre of the oven for 10 minutes. Serve warm.
