Serve this versatile sauce with cake, pork chops, roast chook or latkes.
Sauce
| 4 | Apples, peeled and evenly chopped, we used a mix of granny smiths, gala and braeburn (Main) | 
| 1 | Lemon, zested and juiced | 
| 1 Tbsp | Sugar | 
| ¼ tsp | Apple spice mix, see recipe below, or use ground allspice or nutmeg | 
| 1 piece | Vanilla bean, use a small piece, split | 
| ½ cup | Apple juice, use a good quality one (Main) | 
Directions
- Peel and evenly chop 4 apples. Add to a saucepan with the lemon zest and juice, sugar, apple spice mix (see below) or use ground allspice or nutmeg, the split vanilla bean and apple juice.
- Simmer over a low heat until soft and the liquid has evaporated. Cool and chill.
Apple spice mix
- Lightly toast 1 tsp each of cloves, cinnamon, allspice, mace or nutmeg and black peppercorns. Cool and blitz (in a spice mill or coffee grinder) until finely ground and store in a jar.
