This twist on coleslaw uses Kohlrabi, a member of the healthy brassica family. Kohlrabi can be used in slaws, stirfries or anytime in place of cabbage.
Slaw

1 | Apple (Main) |
1 | Carrot |
2 | Spring onions |
1 | Garlic clove |
Orange mayo
½ cup | Mayonnaise |
¼ cup | Plain unsweetened yoghurt |
1 | Orange |
1 pinch | Curry powder |
1 to taste | Ground black pepper |
Directions
- Peel and coarsely grate kohlrabi,apple and carrot. Thinly slice spring onion and chop garlic clove.
- Place the slaw ingredients in a bowl.
- Finely grate the orange rind and combine with all the mayo ingredients,spoon over the slaw. Toss to coat.
Tip:Use young kohlrabi if possible as they are more tender.
