Ben & I decided to set up a vegetable garden on the verge of our house at Kiwi Esplanade - We find the verge gets the sun all day and it is so nice to see people walking pass and stopping by to say hi and talk about the garden and most importantly is getting to know the people in the area make friends. Sharing what we growing in the garden with people from all walks of life feel so special. Even if we don't know them we tell them to help themselves if they need anything in the garden. Also is feel so special when you see the sea gulls flying above you and watching you doing some gardening. Kiwi Esplanade is the Waterfront at Mangere Bridge and our family house is on Kiwi Esplanade. The best place on Earth.
Ingredients
4 | Radishes (Main) |
1 | Beetroot |
1 bunch | Flat leaf (Italian) parsley |
1 bunch | Mint |
1 bunch | Spinach |
1 handful | Coconut |
2 Tbsp | Coconut oil |
Directions
- Grate the coconut with the hakalo ( grater ) wash radishes, Beetroot, Italian parsley, mint & New Zealand Spinach.y
- Slice radishes into circle - spread them around the dish then throw the grated Beetroot on top. Add Niu (coconut and lastly )throw into the dish the mint, Italian Parsley and the New Zealand spinach. Drizzle the coconut oil on top with the lime and mix them well. Add sea salt & pepper
