At Giraffe I like to involve all our chefs in preparing staff meals, we all then get to sit down before a busy night of service as the Giraffe family and have dinner. Last week Swati, our demi chef, shared her favourite pani puris, this week she’s come up with another couple of dishes; spicy potatoes and her mum’s dhal served with rice and mango chutney. Having just passed the shortest day of the year, these dishes are perfect comfort foods for snuggling in on a cold winter's night. Serve with some steaming rice and roti.
Asafoetida is available in Indian stores and some supermarkets. It is a flavour enhancer, and if you can’t find it don’t worry as it won’t affect the dishes.
