Here is an economical and tasty recipe from my stack of "yesterday's" favourites:
Noodle/tuna fishcakes
- 1 pkt instant noodles (chicken flavour)
- 2 med size eggs
- 375g tin plain tuna or salmon
- 1/2 red pepper chopped finely
- 1 small onion chopped finely
- Some coriander or parsley chopped finely
- 1/2 oil and butter for frying
- Cook the noodles according to the packet instructions.
- Cool and add beaten eggs and then all other ingredients. Stir.
- Drop in heated pan in tablespoonfuls and cook until golden turning once during cooking.
