Noodle/tuna fish cakes - reader contribution

Here is an economical and tasty recipe from my stack of "yesterday's" favourites:

Noodle/tuna fishcakes

• 1 pkt instant noodles (chicken flavour)
• 2 med size eggs
• 375g tin plain tuna or salmon
• 1/2 red pepper chopped finely
• 1 small onion chopped finely
• Some coriander or parsley chopped finely
• 1/2 oil and butter for frying

1. Cook the noodles according to the packet instructions.
2. Cool and add beaten eggs and then all other ingredients. Stir.
3. Drop in heated pan in tablespoonfuls and cook until golden turning once during cooking.
