Easy step-by-steps to thin French-style pancakes
For the batter (makes 12)
- 200g flour
- Pinch salt
- 2 eggs
- 500ml milk
- 20g butter, melted
- Vegetable oil for frying
Put everything except oil into a food processor or blender and blend until smooth. This is the batter. Rest the batter for 30 minutes.

Above and below: To make one pancake, heat a little oil in a small frying pan over moderate heat and add about 50ml of the batter and swirl it to cover the bottom of the pan.
Above and below: Fry until golden on the underside then turn over and repeat on the other side.
