If you haven't tried making your own soft corn tortillas yet I encourage you to give it a go. If you don't have a tortilla press, plastic wrap and a good rolling pin do the trick nicely. Corn masa flour is available from good supermarkets, as is chipotle sauce (I recommend the La Morena brand. You can use their whole tinned chipotle peppers instead, just use much less). No need to stress though, you can always buy flour tortillas if time is short.
Makes 6
1 cup instant corn masa flour
¾ cup warm water, approx
½ tsp salt
Step 1: Put the masa flour and salt in a bowl with the warm water. Use your hands to mix thoroughly, adding a touch more water if needed to form into a smooth clump.
Step 2: Divide into about 6 equal pieces and roll with your hands to form even balls.
Step 3: Either use a tortilla press or lay a sheet of plastic wrap on a smooth bench, placing a ball in the middle and covering with another piece of plastic wrap.
Step 4: Squash down with a heavy pan or board, then use a rolling pin to quickly roll out to about 2mm thick.
Step 5: Lift off the bench then carefully peel back the plastic wrap from one side, gently tipping on to your hand while peeling back the other side.
Step 6: Cook in a hot pan for about 30 seconds each side till slightly browned
