How to stretch a chicken
It's a bit of a push but we have managed to make one whole chicken go five ways. First cut your chicken into pieces using Celia Hay's step-by-step guide. Use the carcass to make this easy chicken stock. Any meat that may still be on the bone once the stock is made could be shredded for sandwiches. The breasts can go a long way stuffed with a cream cheese, spinach, parmesan and wasabi mix and served with peanut slaw. Legs and wings can be given the Fijian curry treatment – halving the recipe to just serve two. The chicken stock can be transformed in to myriad soups such as a hearty bowl of ramen.
