Sesame seeds are tiny, flat, oval seeds with a nutty taste and delicate crunch. They come in a host of different colours, depending upon the variety, including white, yellow, black and red. They’re one of the oldest cultivated crops around, are one of the best vegetarian/vegan sources of calcium and magnesium in our food supply and are also a good source of the minerals manganese and copper. Sesame seeds are also highly valued for oil and are the main ingredient in tahini, which is used to make hummus and is a handy pantry staple.
There are so many ways to utilise the health benefits of these tiny little nutritional powerhouses. Sprinkle them on broccoli, incorporate them into baked goods or simply use them to seasonameal. This nourishing tahini dressing pairs beautifully with salads, rice paper rolls and steamed vegetables.
Tahini dressing
¼ cup tahini
1 Tbsp tamari
1/3 cup water
1 Tbsp ginger, finely grated
2 Tbsp apple cider vinegar
1 Tbsp maple syrup
Whisk ingredients into a bowl until combined. Store in fridge for up to 7 days.
