Step 1: Put a chicken carcass (uncooked or cooked) into a pot.
Step 2: Add 1 small onion, 1 bay leaf, 6 peppercorns and some carrot and celery trimmings.
Step 3: Cover with cold water and simmer gently for 30 minutes.
Step 4: When it is cool strain the stock and freeze in different sized containers for future use.
