Flourless perfection
These luscious cakes, made without flour, are gluten free. Amanda Laird's (photographed at the top of the page) uses ground almonds and Angela Casley's (above) is made from just five ingredients.
Beetroot and date
Nadia Lim's cake is gooey and rich but is not overly sweet. We like to think it's also healthy too, flavoured as it is with a couple of earthy beetroot, yoghurt, dates and that great antioxidant, dark chocolate.

With seasonal pears and a chocolate sauce, Kathy Paterson's cake is perfect for an autumn or winter dessert. Just omit the sauce if you want another slice for morning or afternoon tea (second thoughts, you might just like to pour a little over next day too).
