Gingerella shandy
Freeze gingerella, then break and mix up into a rough sorbet. Fill beer glasses with frosty cold ale and top with frozen gingerella. Feel revived immediately. Get the recipe
Frozen prawn cocktail
Cut a punnet of colourful cherry tomatoes in halves or quarters. Add an equivalent amount of chopped watermelon and place in the freezer until they're just firm. Add the zest and juice of a lemon or lime, 1 finely chopped spring onion, a big handful of just cooked prawns, fresh coriander or chervil, a good pour of hot sauce, a dash of worcestershire sauce, a little salt and pepper, and toss together well. Layer into tall cocktail glasses and you're instantly cooler. A cheeky fresh oyster or two along its brine will also fit right in. Get the recipe
Sparkling cucumber water
Chill a water jug then fill it with cold soda water. Add a generous amount of thinly sliced cucumber, a punnet of frozen blueberries (or mixed berries) and fresh mint. Refresh your guests. Get the recipe
Iced tea
Make a large teapot of hot tea by mixing your favourite regular tea and a fragrant tea (such as earl or lady grey). Add thin slices of fresh ginger and a little honey to sweeten, steep until cool, then chill until cold. Pour tea into a cold jug, add frozen slices of lemon and orange and serve on ice with fresh mint. It's also great topped off with a little lemonade and makes a great cocktail mixer too. Try light rum, iced tea, a squeeze more citrus, and top with something fizzy. Get the recipe
