Prosciutto and mushroom salad
Grill portobello mushrooms and serve on mixed rocket and baby salad greens, with slivers of prosciutto, dressed with a balsamic vinaigrette and parmesan cheese.
Prosciutto-wrapped chicken breasts
Stuff chicken breasts (try apple slices with crispy fried sage leaves, cranberries or pesto with roasted red peppers), wrap them in prosciutto and grill. Whisk stock, wine or butter into the pan juices for a quick sauce.
Peas and prosciutto
Cook peas (in chicken stock for extra flavour) then toss through with pan-fried onions and prosciutto. Make this a meal by stirring through cream, a dash of lemon zest or nutmeg, salt and pepper and serving over pasta. Available at Countdown.
