I packed my lunch and looked at the rest of my food and thought I was likely to have leftovers.
However, I got to work and realised that I was actually less than half way through the challenge and was in fact, a day ahead of myself. But it didn't impact on my mood at all.
Yesterday I was tired and lacked motivation, which was completely different to today.
I'm back to being my bubbly self.
I think Day Two was the day I hit a wall. Considering Day Three has seemed a lot easier, I'm hoping the wall has since come down. The coffee craving is still around (and is pretty strong) but I'm fighting it.
The Live Below The Line challenge is definitely an eye-opener. I have noticed I have strong willpower - knowing that people have donated money towards me taking up this challenge - and I've realised I really don't need to spend as much money as I normally do on food, unneccessary food that is.
Treats and extravagant foods are all fine but when you remind yourself that simple things like herbs, spices and spreads are all luxuries for those living in poverty, you have a new appreciation for what you have.
This morning I had a kiwifruit and a banana for breakfast. Lunch was two small baked potatoes and dinner will be a bowl of rice with half a tin of salmon (the remaining half from last night's dinner). However, if I'm craving something sweet I may swap that meal with a bowl of plain rice mixed with half a can of fruit salad.

However, for day one I stayed under my $2.25 limit eating very basic with a can of baked beans and two potatoes throughout the day.
