500g skinned and boned chicken breast
Salt and pepper to taste
1 tbsp olive oil
4 wholemeal hamburger buns, split and toasted
6 tbsp each: mayonnaise, chutney

6 tbsp each: mayonnaise, chutney
4 large crisp lettuce leaves, sliced
2 tomatoes, thinly sliced
1 small cucumber
1 red onion, sliced
Method:
Thinly slice the chicken. Season.
Pan-fry in oil for about 1 minute each side. Spread the burger buns with the combined mayonnaise and chutney.
Top bases with lettuce, tomatoes, chicken, cucumber and onion. Cover with the burger tops. -Serves 4
