"Kelly has done an amazing job of reaching out to lots of food vendors, and we've got a massive mix. It's not just hot dogs on sticks, it's every cuisine you can think of."
Scarrow said there would "lots of local" vendors as well as "heaps of out-of-towners".
"They're ones that you might get to see at the Caboodle or the Festival of Cultural Unity, but not on a regular basis," Scarrow said.
Entry to the festival is free and it runs from 2pm 'til 8pm. Entries for market stalls has now closed, and more than 120 will be on site on Sunday.
"We went through everything last night and we were blown away by the variety," Scarrow said.
"Its gone a notch up from last year. People have said 'yep, this is something we want to get involved with', and I think that with Covid, some people haven't had a lot of work so they're looking at going to different places.
"I think people will see things they've never seen before."
Mallett said that "everything from honey packs right through to leather" would be on sale.
"It's all pretty crafty, and that's what we wanted to celebrate. The stuff that people are making is just incredible."
One person who got tapped on the shoulder was Andy Henshaw from Roots Brewing.
"You may want to drop your partner off at the bar and we'll look after them for an hour or so while you continue to go around the rest of the market. There are 120 stalls, so that's a lot to get through."
Scarrow said she could only see the market "continuing to grow" over the next few years.
"It'll start the conversation around what else Darryl and I can do during the calendar year, because there are gaps in our schedule and we really want to showcase local makers and suppliers."
The River City Christmas Night Market and Street Food Festival is on Sunday, December 20 from 2pm-8pm at the Whanganui Racecourse. Entry is free.
