Recipe: Fig, Mozzarella and Prosciutto Salad

FIG, MOZZARELLA AND PROSCUITTO SALAD
Serves 4

• 4 cups salad greens
• 8 slices prosciutto
• 6-8 ripe figs, sliced
• 200g fresh mozzarella
• ½ cup roasted hazelnuts
• Salt and pepper
• ¼ cup hazelnut oil
• 2 Tbsp lemon juice
• 1 tsp runny honey
• Salt and pepper

1. Spread salad greens on a platter. Twist and fold the prosciutto. Add the sliced figs and torn-up mozzarella, and sprinkle with hazelnuts. Season with salt and freshly ground pepper.

2. In a small jug mix oil, lemon juice and honey. Splash over the salad and season with salt and pepper.
