Plum, Goat Cheese & Hazelnut Salad Recipe

Slices of juicy plum sweeten every bite of this summery, three-step salad.

This salad is ideal for a hot summer evening. It can be made in 10 minutes. Sprinkle, slice, and drizzle, then enjoy. The plums will add sweetness to the dressing. For the herbs, use whatever fresh herbs you like.

PLUM, GOAT CHEESE AND HAZELNUT SALAD

Serves 4

For the dressing

2 tbsp chardonnay vinegar

¼ cup olive oil

1 clove of garlic, crushed
For the salad

2 cups rocket leaves

8 plums, halved and quartered

½ cup toasted hazelnuts

100g goat’s cheese, sliced

1 cup herbs of your choosing

1. To make the dressing, in a jar combine the vinegar, oil and garlic.

2. Onto a platter place the rocket. Top with the plums, hazelnuts, goat’s cheese and herbs.

3. Season and drizzle over the dressing. Simple as that.
