Try this light breakfast thickshake recipe – it’s bright, creamy and refreshingly invigorating. It's also gluten and refined sugar-free, as well as being suitable for vegans.
MANGO, LIME & MINT THICKSHAKE RECIPE
Serves 2
½ cup fresh or frozen diced mango
1 frozen banana*
Juice of ½ lime
1 ¼ cups coconut milk
2cm piece of fresh ginger
A handful of fresh mint
A handful of ice cubes
1. Put all the ingredients except a few of the mint leaves in a blender and blend until smooth. If necessary, add a little water or extra coconut milk to reach your desired consistency.
2. Pour into glasses, garnish with reserved mint leaves, and serve.
*You can use fresh banana if you don’t have frozen, though frozen gives it a lovely thick consistency, like ice cream.
