Beef & Vegetable Hot Pot Recipe

Bring this sharing pot to a boil and cook all your seasonal favourites, perfect for a crowd.

This is a fun dish to enjoy with a crowd. If you have a gas burner, try cooking the meal in the pot at the table. You can swap out the meat or vegetable options to your taste. To spice it up, add a teaspoon or two of Sichuan pepper.

BEEF AND VEGETABLE HOT POT

Serves 4

1 litre beef stock

1 tbsp gochujang paste

200g mushrooms, quartered

1 onion, sliced

4 stalks broccolini

200g noodles

4 cups shredded cabbage

1 cup bean sprouts

300g beef fillet, sliced thinly
Sauce

1/4 cup soy sauce

1/2 teaspoon of freshly ground pepper

1/4 cup sweet chilli sauce

1 clove of garlic, grated
  1. In a large pot, bring the stock and gochujang paste to a simmer.
  2. Add the mushrooms, onion, broccolini, and noodles and cook through.
  3. Just before serving, add the cabbage and sprouts, cook to wilt, and then add the beef. Season to taste with salt.
  4. Mix the soy, pepper, chilli sauce and garlic. Add half to the pot and serve the remaining on the side.
