I love finding a jar of jam or chutney with my name on it under the Christmas tree. This apple and cranberry chutney can be enjoyed with your turkey or ham, added into sandwiches made from leftovers on Boxing Day or served with your favourite blue cheese. It's also an easy recipe, so if you don't usually make chutney, give it a go. You'll find cranberries in the frozen department of the supermarket or fruit store.
APPLE AND CRANBERRY CHUTNEY
Makes 1½ litres
• 800g granny smith apples, peeled, cored and diced
• 2 large onions, chopped
• 25g grated fresh ginger
• ½ tsp freshly ground pepper
• 400g sugar
• 150ml cider vinegar
• 350g frozen cranberries
1. Into a large pot place the apples, onion, ginger, pepper, sugar and cider vinegar. Bring to a simmer, stirring until the sugar has dissolved. Continue to simmer for 40 minutes, then add the cranberries and cook for a further 20 minutes.
2. While hot, spoon into sterilised jars. Store until ready to eat.
