ALMOST RAW SALAD
Serves 4
• 2 cups grated carrot
• 3 cups grated beetroot
• ¼ cup chopped parsley
• ½ cup cooked puy lentils
• ½ cup toasted pumpkin and sunflower seeds mixed
• ½ cup cranberries
Dressing
• 2 Tbsp flavourless oil
• 2 Tbsp balsamic vinegar
• 1 Tbsp honey
• 1 tsp grainy mustard
• Salt and pepper
1. To make the dressing, place the oil, vinegar, honey, mustard and salt and pepper in a jar. Shake well to mix.
2. Combine the carrot, beetroot, parsley, lentils, seeds and cranberries in a large bowl. Add the dressing and mix, letting the salad sit for 20 minutes before serving.
