Grapefruit curd is very versatile. Use on meringues, to top cakes and tarts or fold through cream as a parfait. It’s also great simply spread on to a piece of toast.
GRAPEFRUIT CURD RECIPE
Makes 2 cups
100g butter, melted
3 eggs
Zest of 1 grapefruit
¾ cup grapefruit juice
180g caster sugar
- Place the melted butter, eggs, zest, juice and sugar in a glass bowl, whisking until well combined.
- Heat water in a small pot until simmering. Place the bowl on top, without the base of the bowl touching the water. Whisk occasionally for around 30 minutes until thickened.
- Spoon into jars and store in the fridge until needed.
