A Simple, Versatile Grapefruit Curd Recipe

Grapefruit curd is very versatile. Use on meringues, to top cakes and tarts or fold through cream as a parfait. It’s also great simply spread on to a piece of toast.

GRAPEFRUIT CURD RECIPE

Makes 2 cups
100g butter, melted

3 eggs

Zest of 1 grapefruit

¾ cup grapefruit juice

180g caster sugar
  1. Place the melted butter, eggs, zest, juice and sugar in a glass bowl, whisking until well combined.
  2. Heat water in a small pot until simmering. Place the bowl on top, without the base of the bowl touching the water. Whisk occasionally for around 30 minutes until thickened.
  3. Spoon into jars and store in the fridge until needed.
