Run by Christian McCabe and Dave Verheul, formally of Wellington's Matterhorn and more recently Town Mouse in Carlton, Embla call themselves "a wine bar in the middle of town" but it's so much more. Dining as well as drinking at Embla is a sublime experience. The atmosphere is fun and casual but the food, like this octopus with borlotti beans, turnip and walnut is expertly prepared with a drinks list to match.

4. Culture at the National Gallery Of Victoria
As Australia's oldest and most-visited gallery, there's always something worth seeing at the NGV, and the museum's permanent collection houses about 70,000 pieces of Australian art. Upcoming exhibitions include Japanisme: Japan and the Birth of Modern Art from May 25, and MoMA at NGV: 130 Years of Modern and Contemporary Art from June 9.
