2 400g tins of white beans, drained
1 400g tin of tomatoes
1 Tbs tomato paste
1/2 cup vegetable stock or water
1 small onion, preferably red, thinly sliced
2 bay leaves
Sea salt and freshly ground black pepper
1 Tbs olive oil
1 cup frozen peas
150g feta
1. Preheat oven to 180C. Pour the beans into a baking dish. Roughly chop the tomatoes and add with the juice.
2. Mix the paste and stock or water together and add with the onion, bay leaves, seasoning and olive oil.
3. Bake for 30 minutes then scatter with peas and return to the oven for a further 10 minutes. Crumble over the feta before serving.
