GRILLED CURRIED CHICKEN WITH CINNAMON COUSCOUS
1 tbsp curry powder
3/4 cup plain yoghurt
Salt and freshly ground black pepper to taste
2 large skinned and boned chicken breasts
2 tsp olive oil
1/4 tsp ground cinnamon
1 1/2 cups each: hot water, plain couscous
Quickly toast the curry powder in a small pan to bring out the flavour. Stir into the yoghurt.
Score the tops of the chicken breasts and season. Spread with the yoghurt mixture.
Cook under a preheated grill for about seven minutes or until cooked through.
Meanwhile, place the oil and cinnamon into a medium saucepan and heat for 30 seconds. Add the water and couscous and stir over low heat until the couscous has absorbed the water.
Remove from the heat. Cover. Fluff with a fork before serving.
Slice the chicken and serve over the couscous. Excellent accompanied by a crisp salad. - Serves 4
