This is a good way of using leftovers to create a new meal. You can stack as many as you like but more than four becomes a bit difficult to cut.
1 Make the pancakes and white sauce as above.
2 In the base of a baking tray lay the bottom pancake. Mix a little white sauce with a filling of your choice and spread evenly across the pancake. Put another pancake on top and repeat. Try using different ingredients and colours in each layer so you get a good effect when you cut the stack.
3 Finish with a pancake and the white sauce. Grate cheese over this and bake the stack in a moderate oven for at least 15 minutes.
4 To serve, cut a wedge from the stack, garnish with fresh herbs and serve with a crunchy green salad.
